There are two types of activities you can do; Ski Touring or Mountain skiing. The main difference lies in the equipment and how this allows you to move in the terrain. Ski Touring or Backcountry skiing boots and skis have heavier bindings, and are more like alpine boots. This allows for a better balance and stability when going downhill. Mountain skiing boots and skis however, are more suitable for when you have to put more hours of skiing on flat terrain/climbing to get to the peak. The skis are longer, the bindings more flexible, but in return they give less stability when going downhill. Both types give you slightly different experiences; with backcountry the downhills is the main event, but with the mountain skis the ascent is almost equally important.
